This is a delightfully textured soup. The combination of broccoli, cauliflower and carrots will not only give beautiful colors of this soup, but also beautiful flavors.
Some would say broccoli is boring but that is far from reality. Broccoli is juicy, fresh, firm and needs to be cooked right. Also because of its health benefits should be used more often in the diet.
Cauliflower is one white food you should definitely not be avoiding, and there are some amazing ways to swap out unhealthy foods with this nutrient-dense veggie.
The Carrot is a very versatile vegetable and can be used in a myriad of tasty and sweet dishes, mostly very healthy eating .Carrots may be eaten raw or cooked in almost any manner imaginable.
For this creative dish for 4 persons we need the following ingredients:
1 cup broccoli
1 cup cauliflower
1 cup carrots
1 cup zucchini (which will be the basis for the creamy structure of this soup)
according to your taste: sea salt, ground black pepper
for decoration: lemon, lemon zest, fresh chopped parsley or toasted integral bread
Method of preparation
1 Step – The carrots should be peeled and cut into a circles, broccoli and cauliflower chopped in small bite-sized florets, these ingredients should have approximately the same shape (as in the picture)
2 Step – Put 1 l water in the pot and add the carrots and zucchini(the zucchini should be cut into larger pieces), bring to a boil, cover, and reduce heat to simmer for 15-20 minutes or until the vegetables are do soften.
3 Step – Remove pot from the stove and remove pieces from zucchini, carefully because they are hot. Then put them in a suitable pot, and with help of a hand blender you will get a mixture like puree. This will be the basis for the creamy structure of this soup. After that we return this mixture into the pot again where they is cooked before.
4 Step – We return the pot on the stove for further cooking, add first a cauliflower and cook it 3 minutes, after that add broccoli, sea salt and ground black pepper, stir and let it boil on low heat for another 2 minute.
Advice: This creamy soup is easy to prepare, but you need to be careful if you cooked broccoli more than necessary, it will change the color and taste. Therefore, it’s better to be a little raw, than cooked more.
